Bread Dumplings with Baking Powder Cooked in the Microwave
Ingredients
150 g bread rolls, 200 ml water
200 ml milk
1½ tsp salt
300 g coarse flour
¾ packet baking powder
2 eggs
Lard for greasing the cups
5¼ oz bread rolls, ¾ cup plus 1 tbsp water
¾ cup plus 1 tbsp milk
1½ tsp salt
2½ cups (10½ oz) coarse flour
2¼ tsp baking powder
2 eggs
Lard for greasing the cups
Method
Mix all the ingredients together, finally fold in stiffly beaten egg whites. Leave to rest for about 5 minutes. Grease 4 straight-sided cups with a diameter of 7.5 cm well with lard. Fill them with the mixture to 1.5 cm below the rim.
Put them in the microwave at 700 or 750 W and cook for a TOTAL of 8–9 minutes. Halfway through cooking, turn the cups around and finish cooking. If a cup is very full, the dough will rise out a little, but that does not matter.
I tried cooking the dumplings in a 650 W microwave; I left them in for 2 minutes longer and they cooked through. You can comfortably cook the dumplings two at a time; it really does not matter.
